Our Dining Program

The Bistro offers 3 meals daily with a full menu for breakfast, lunch and dinner. Your monthly maintenance includes one meal a day. There is always a choice to choose from and if there is something you would like to order off the menu, our chef will accommodate you.

In addition, to the Bistro the Formal Dining is open for dinner where you can enjoy the same menu and have wait service.

Gower Lane - Director of Dining Services:

Gower Lane, Dining Services Director, has worked in the hospitality field since the age of 14 when he got his first job with an off-premises catering firm in the tri-state area. Since then he has graduated from both SUNY at Delhi and The Culinary Institute of America. Upon graduation from the Institute in January of 1992, he went to work for Marriott Hotels in Florida, Connecticut and New York, and for a corporate conference center, country club and private caterer. He most recently worked for Edgehill, a CCRC located in Stamford, Connecticut, where he served on the start-up management team. After spending 6 years with Edgehill, he decided to put his start-up skills to the test again and joined Kendal on Hudson's management team in November of 2004 to prepare for opening in May of 2005.

Darren Flock - Executive Chef

Darren joined Kendal on Hudson in 2008 and has been in the culinary field for close to 20 years.  A graduate of the Culinary Institute of America, Darren has worked in nearly every area of food service including hotels, country clubs, restaurants, catering and healthcare.  Today, he still enjoys competing in food competitions and has won a few.

Kendal staff are available to residents for catering and the following note was received after one such recent event:

I want to thank you both for your patience and care in planning my mom’s party. The staff is always very welcoming in the dining room and his presence serving at the party was an unexpected plus. The young woman who served was efficient and friendly. My mom really liked sharing some of her favorite dishes and we appreciated having a welcoming place to hang out. Thanks again and feel free to pass this on to whomever should know how fortunate they are to have you guys.
